In a separate small bowl whisk the eggs and beat well; add it to the quinoa-spinach mixture along with salt and pepper. Mix gently untill everything is combined. Pour the mixture in the prepared cake pan. Bake for about 46 minutes mine got done after 44 minutes until the top is golden and the quiche has started to pull away from the edge of the baking dish.
