Enjoyed very much. Loved the citrus taste with the dressing to the sweetness of the pecans. Thanks for recipe. My mum made this for Christmas lunch and it was an absolute huge hit.

There was none left it was so delicious. The mix was perfect with our assorted of BBQ meats. I made this salad for a small gathering for Friendsgiving and everyone LOVED it! I doubled the dressing so that I would have extra. It took about 10 minutes to harvest the pomegranate seeds and the freshness was so worth it.

The saltines of the feta cheese is a nice balance. I love the fresh taste, the light citrusy dressing and that this is a salad none of my family and friends have tried. It will be gracing our table again during this holiday season and again and again and again!

Print Pin Rate. Prep Time: 10 minutes mins. Total Time: 10 minutes mins. Servings: 4 servings. Dressing: 1 teaspoon Dijon mustard 3 tablespoons red wine vinegar 3 tablespoons extra-virgin olive oil 1 tablespoon white sugar or honey 1 lemon, zested and juiced salt and pepper to taste.

To make the candied pecans, pour the sugar in a small skillet and pour the pecans on top. Cook over medium heat until sugar melts and turns a caramel color stirring constantly so that the nuts and sugar do not burn.

Be patient! It takes a while for the sugar to start melting. Once the sugar turns a caramel color coat keep stirring to coat the pecans with it. Pour pecans onto greased wax paper or aluminum foil to cool. Once pecans are cooled, break them into pieces.

Place the lettuce, pomegranate seeds, red onion, feta cheese, and pecan pieces into a large mixing bowl; set aside. Whisk together the Dijon mustard, vinegar, olive oil, sugar or honey, lemon zest, lemon juice to taste , salt, and pepper in a separate bowl.

Pour over the salad and toss to coat. Like other fruit juices, pomegranate juice does contain a decent amount of sugar. Be sure to purchase pomegranate juice with no sugar added to keep it to a minimum. This pomegranate salad recipe is extremely versatile.

I used shaved Parmesan in place of blue cheese, canned oranges and forgot the onion…guests devoured it. So fresh and delicious!

Pomegranate Salad -

In a small bowl, toss the kohlrabi with a drizzle of the dressing and toss to coat. In a medium bowl, combine the farro, herbs, and about ¼ of the dressing. Assemble the salad on a large platter with the farro, mixed greens, squash, onions, halloumi, kohlrabi, carrots, apple, and the walnuts or pepitas.

Drizzle with the remaining dressing, as desired, and sprinkle the pomegranate arils and feta cheese on top. Season to taste. I like to add a good squeeze of lemon at the end, or just before serving for extra pop.

I gently toss the greens with the farro as I assemble the first layer. A shallow bowl or rimmed platter is key here. I looked for substitutes online and saw paneer as an option! This was delicious when I made it!

Fabulously festive to look at, and scrumptious to eat! Crunchy Honey Walnuts add texture, while creamy blue cheese brings tangy umami to this party. And as for raw kale haters? Don't despair!

This kale is MARINATED to tenderise and temper the kale flavour. Instructions Marinated Kale: Remove leaves: Grab the base of the stalk then run your fist up the stalk to remove the leaves.

Slice: bundle the kale leaves on a chopping board, then slice 0. Scrunch: Place in bowl, drizzle with olive oil, sprinkle with salt and pepper. Use your hands to scrunch in order to soften leaves and coat everything with the oil. Do this for 20 seconds. Leave for 30 minutes to marinate — leaves will soften.

Try it — much tastier than plain raw! Honey Walnuts: Toss: Place walnuts in a bowl, drizzle with honey, sprinkle with cinnamon and salt.

Mix, spread on paper lined baking tray. Leave to cool, then use fingers to roughly break walnuts up into slightly smaller pieces. Pomegranate Dressing: Place ingredients in a jar and shake very well, being sure that there is no molasses left on the bottom of the jar. Shake in jar is better than whisking to bring this dressing together.

Remove Pomegranate Seeds: Cut pomegranate in half. Over a bowl, turn cut face downwards, then use a wooden spoon to very! firmly smack the back of the pomegranate. The seeds will fly out through your fingers into the bowl.

It's very satisfying!!! Keep smacking all over the skin until the seeds are all out. Pick out any white pith that fell out, then use seeds per recipe. You will probably get some juices pooling in the bowl; add this to the dressing too. Grapefruit, oranges: Cut off peel and pith, then segment see this video at 41 sec for demo.

Assemble: Dress greens lightly: Place kale and spinach leaves in a giant bowl. Drizzle with about 3 tablespoons of Dressing then toss very well. Drizzle over remaining dressing just before serving. Serving: Best served freshly assembled but this salad will hold up much better than most because kale doesn't go as soggy once dressing, it's even good the next day!

The sugared pecans, the dressing and the pop of the pomegranate seeds are heavenly! It was well worth the time to prepare the pomegranate seeds! The marriage of the savory feta with the tangy pomegranate seeds and sweet pecans was perfect! Topping it all with fresh lemon dressing made it the most decadent salad!

I added half an Avocado cubed as I had one i wanted to use up. It was good and the sweetness of the pecans combined with the saltiness and soureness of the dressing was just divine.

Perfect for lightening Pomegeanate over Pojegranate holidays and serving something colorful on Chitosan for energy side. As much Pomerganate I love to play with my Pomegranate Salad, one Pomegranage Pomegranate Salad goes severely neglected is my salad creativity. I love to plan my meals in a particular way. First comes the proteins — buttery roasted chickens, perfectly pink steaks and citrusy salmons are faves. And then comes the carbs. Ohhhbaby. So, that often means that my veggies are an afterthought.
